P.E.I. Mussels with Lemon Grass, Garlic and White Wine

It was a beautiful day in Portland, Maine so I figured I’d have lunch on the porch today. I stopped off and bought some mussels on the way home. I’m using my old banged up 2 qt aluminum pot that is just the right size for all my outdoor cooking. I make sure I bring it with me whenever I road trip.

Along with the mussels in the pot, there is lemon grass, garlic, white wine, cilantro and lime. After the broth had cooled and the sand had settled, I pulled off about half and used it for a really nifty bowl of ramen.

1.5 lbs Mussels
2 stalks lemon grass
2 cloves garlic
1 cup white wine
2 tbls fresh cilantro
half a lime
Simmer about 6-8 minutes
